Fes el-Bali, the walled old city, is dense enough that a map only gets you so far â many visitors find it easier to accept getting turned around occasionally and treat that as part of the experience. A few fixed points help orient a visit.
The Chouara Tannery
The Chouara Tanneryâs grid of stone dye pits, viewed from surrounding terrace balconies, is Fesâs single most photographed sight. The tanning and dyeing process on display here has changed little for centuries, and terrace viewpoints (some attached to leather shops) are usually offered a sprig of mint to offset the smell.
The University of al-Qarawiyyin and Bou Inania Madrasa
Founded in 859 CE, the University of al-Qarawiyyin is recognized as the oldest continuously operating academic institution in the world; its library and mosque complex can be viewed from the courtyard, though the interior is generally reserved for students and worshippers. The Bou Inania Madrasa, a 14th-century religious school, is more fully open to visitors and known for its detailed zellige tilework and cedar carving.
The Mellah
Fesâs Mellah, the historic Jewish quarter, sits at the edge of the Medina and has a distinct architectural character, with ornate wooden balconies facing the street â unusual in a Moroccan Medina, where street-facing walls are typically plain.
Getting oriented in the Medina
Fes el-Bali is believed to be the largest car-free urban area in the world, and goods still move through it by handcart and pack animal. A local guide for at least the first half-day is genuinely useful here, less for historical commentary than for navigation and avoiding unofficial âguidesâ who approach visitors near the main gates.
How much time do you need?
A full day covers the main sights at a reasonable pace; two days allows more time in the souks and a visit to the newer Fes el-Jdid district. Fes also works well as a base for a day trip north to Chefchaouen or as the starting point for a desert tour toward Merzouga.
